The Ritz-Carlton, Pune is pleased to announce the appointment of Gagan Sahu as Executive Sous Chef. With over 14 years of experience in some of India’s most renowned luxury hotels and restaurants, Chef Gagan brings a refined modern sensibility to Indian cuisine, along with deep ingredient knowledge and a strong focus on sustainability. He is poised to further enhance the hotel’s acclaimed dining offerings.

Chef Gagan returns to The Ritz-Carlton, Pune following his earlier tenure as Chef de Cuisine during the hotel’s pre-opening phase. During that time, he led daily operations at the specialty restaurants and All Day Dining venue. Under his guidance, the All Day Dining restaurant earned the title of Best in the City from the Times Food and Nightlife Awards for three consecutive years. He also led several acclaimed culinary events, including the Louis XIII Cognac Dinner, the Degree Celsius Dinner, and the Lexus Chef’s Table, all celebrated for their creativity and excellence.

Most recently, Chef Gagan held senior culinary positions at Hyatt Regency Pune & Residences and The St. Regis Goa. At the latter, he played a key role in launching Susegado, a beachfront dining concept that highlights coastal Indian flavors with a contemporary edge. His expertise spans high-volume banqueting, conceptual menu design, and leading diverse kitchen teams to consistently deliver excellence in quality, presentation, and guest satisfaction.

A passionate proponent of zero-waste cooking, Chef Gagan champions the use of locally sourced, indigenous ingredients to craft globally inspired dishes. His culinary style is defined by sustainable practices, fine-dining plating techniques, and innovative vegan-forward creations.

In his new role, Chef Gagan will contribute to the hotel’s evolving culinary direction across venues such as Ukiyo, Aasmana, the Tea Lounge, All Day Dining, and Banquets. He will work alongside the leadership team to create memorable gastronomic experiences, while mentoring young chefs, leading menu development, and upholding The Ritz-Carlton’s legendary standards in every dish.
