Fairmont Mumbai Hosts Malaysian Food Festival in Collaboration with Tourism Malaysia
Fairmont Mumbai, in collaboration with Tourism Malaysia, invites the city to embark on a refined culinary journey with a Malaysian Food Festival at The Merchants, taking place from 30th January to 8th February 2026.
Hosted at The Merchants, Fairmont Mumbai’s signature New Wave Foodhall, the festival celebrates cultural exchange and immersive gastronomy. Known for its six theatrical kitchens and dynamic dining format, the space will transform into a vibrant showcase of Malaysian cuisine where time-honoured traditions, masterful techniques, and everyday rituals come together in a sensorial and authentic experience.
Celebrated Malaysian chefs at the helm
The collaboration brings together Fairmont Mumbai’s culinary brigade with two distinguished ambassadors of Malaysian gastronomy Chef Irwan, Corporate Executive Chef at Adabi Consumer Industries, and Chef Faridul Ataras Ab Razak, Executive Chef at Ibis Hotel Kuala Lumpur City Centre. With decades of experience across leading international hotels, culinary competitions, and advocacy for Malaysia’s food heritage, the chefs offer an intimate perspective on a cuisine shaped by Malay, Chinese, Indian, and regional influences.
A philosophy rooted in authenticity and reinterpretation
Guided by Chef Prasad Metrani, Executive Assistant Manager – Food & Beverage at Fairmont Mumbai, the festival is anchored in a shared philosophy of honouring authenticity while reinterpreting flavours for the contemporary palate. The curated menu comes alive through live culinary stations and interactive kitchens, inviting guests into a dynamic gastronomic dialogue.

A thoughtfully curated buffet experience
Conceived as an elegant lunch and dinner buffet, the ten-day festival unfolds as a journey through Malaysia’s regional flavours. Guests are welcomed with traditional refreshments such as Teh Ais Limau, setting the tone for a meal layered with warmth, spice, and cultural nuance. The Fairmont Mumbai team, dressed in Malaysian cultural attire, adds to the immersive ambience.
From classic appetisers to soulful mains
The menu presents a refined selection of Malaysian favourites, beginning with Pandan Ayam, Udang Goreng, Bakwan Sayur, and Tauhu Sumbat. Salads such as Kerabu Ayam, Kerabu Udang, and Acar Jelatah highlight freshness and balance, while comforting soups like Laksa Lemak and Sup Ayam Bersama Kentang reflect deeply rooted traditions.
Main courses include Ayam Masak Berlado, Gulai Lemak Udang Dengan Rebung, Rendang Tauhu, and Fried Meehoon, celebrating the cuisine’s signature depth and spice.
A sweet finale and iconic beverages
Desserts offer a fitting close with Cucur Badak, Kueh Sri Puteri Ayu, Kuih Bakar, and Serawa Durian. Complementing the menu is a curated beverage selection featuring Teh Tarik, cendol, luwak coffee, and bespoke cocktails inspired by Malaysian ingredients and rituals.
