IICA New Delhi Hosts ‘Culinary Confluence’ with Diplomats Ahead of Diplomatic Nite 2025
The International Institute of Culinary Arts (IICA), New Delhi, hosted its diplomatic workshop Culinary Confluence at its Hauz Khas Village campus as part of the Prelude Series leading up to Diplomatic Nite 2025. The immersive post-noon session brought together fifteen diplomats and senior officials from the embassies and high commissions of Kenya, Thailand, Lesotho, Moldova, Bangladesh, Ecuador, Palestine, Yemen and Germany for a unique interactive programme deeply rooted in the flavours of Indian cuisine.
A Hands-On Exploration of India’s Culinary Traditions
The session was led by Chef Sumit Gupta, Executive Chef at IICA, along with the institute’s faculty. Diplomats were invited into the main kitchen classroom to prepare three iconic dishes Mutton Dum Biryani, Mirchi Baigan ka Salan and Burani Raita.
These dishes, representing culinary traditions from Lucknow and Hyderabad, showcased how food serves as a powerful bridge between cultures, inspiring conversations and shared experiences beyond borders.
Culinary Diplomacy in Action
Sharing his thoughts on the initiative, Chef Virender Singh Datta, Founder and Chairman of IICA, said: “This exchange reflects India’s culinary legacy and its ability to unite people. Every cuisine carries the soul of its culture, and today’s interaction reaffirmed that the essence of diplomacy, like cooking, lies in collaboration, respect and understanding.”
The workshop’s spirit of cross-cultural appreciation was echoed by Linda Hawke of The Diplomatist, who noted: “Diplomacy flourishes when we sit together, laugh together, and taste together. Today was not just about recipes; it was about relationships.”
Strengthening India’s Culinary Diplomacy
According to Arjun Datta, Managing Director, the initiative reinforces IICA’s continued commitment to promoting culinary diplomacy and global cultural exchange.
The workshop concluded with a tasting session, where participants engaged in meaningful discussions on food heritage, traditions and the expanding role of cuisine in international dialogue.
