Taj Palace, New Delhi is proud to present a celebration of Southern India’s rich culinary heritage with an exclusive pop-up of the award-winning Southern Spice from Taj Coromandel, Chennai at its popular all-day dining venue, Capital Kitchen.
At the helm of this gastronomic experience is Chef Rajendran, a seasoned expert in South Indian cuisine with over 25 years of culinary mastery. His expertise draws from deep roots in Tamil Nadu, shaped by his time in Chettinad, Thanjavur, and Chennai. Mentored by the legendary Master Chef Natarajan and inspired by his mother’s traditional cooking, Chef Rajendran infuses every dish with authenticity and passion.
The curated menu offers a refined journey through the diverse flavors of Southern India. Signature highlights include Royyala Iguru (prawns simmered in a luscious coconut, cashew, and Andhra spice blend), Kozhi Melagu Curry (chicken in a bold black pepper and fennel gravy), Meen Pollichathu (Kerala-style fish wrapped in banana leaf), and Mutton Pepper Fry (mutton slow-cooked with onion, curry leaves, and ground pepper). Vegetarian stars like Pachakari Kuruma (seasonal vegetables in creamy coconut-cashew curry), Kuzhi Paniyaram (crispy rice and lentil dumplings with fiery onion relish), and traditional desserts like Elaneer Payasam and Ada Pradhaman round out the experience.
