The Fern Hotels and Resorts presents ‘Cuisines of the Hills in India’ food festival
This summer, The Fern Hotels and Resorts brings to you ‘Cuisines of the Hills in India’, a specially curated food festival celebrating the rich and diverse culinary legacies of India’s scenic hill stations. Scheduled to take place from May 23 to June 1, 2025, between 7 PM and 9 PM across 16 Fern properties, this unique event offers guests a chance to explore the cool climes and vibrant cultures of India’s mountainous regions—from the misty Himalayan ranges to the lush slopes of the Western Ghats.
Festival-goers can indulge in an array of authentic dishes such as Chana Madra and Dham from Himachal Pradesh, Aloo ke Gutke and Gahat ki Dal from Uttarakhand, and Tibetan-inspired favourites like Thukpa and Momos from Darjeeling. Coorg’s robust flavours are highlighted through specialties like Pandi Curry and Kadumbuttu, while the cuisine of Kerala’s highlands is represented by dishes such as Appam with Stew and Kappa with Meen Curry. Each dish is crafted using regionally sourced ingredients including wild herbs, lentils, millets, barley, and unique local spices.
To complement the culinary journey, the festival’s ambiance mirrors the charm and warmth of hill homes. Guests will dine in cozy, rustic wooden settings adorned with traditional artifacts, handwoven rugs, and serveware made from clay, wood, and copper. Staff dressed in region-specific attire enhance the immersive experience, while a carefully curated soundscape featuring traditional instruments—like Himachali folk drums, Tibetan throat singing, and Coorgi flutes—blended with ambient tones recreates the tranquil spirit of the hills.
