The Legacy of Biryani
Biryani, one of India’s most cherished dishes, draws inspiration from Persian and Indian culinary traditions that flourished during the Mughal era. Originating as a Persian-style rice dish, it evolved through Indian spices and cooking techniques, giving rise to distinct regional styles such as Delhi, Lucknow, Kolkata, Hyderabadi, and Awadhi.
The soul of biryani lies in the Dum Pukht technique — a slow-cooking method that allows every layer to absorb and retain deep flavours. Over centuries, regional adaptations have turned biryani into a vibrant expression of India’s diverse culinary heritage.
